No more debt!!!

Hello ladies and gentlemen!  It’s been a while since my last blog entry.  Being in a new apartment and working has taken some adjusting, but along with that came a lot of downtime with my thoughts, and a small stereo system I got for Christmas.  So I was listening to one of my favorite artist, Billy Joel, and he has this song “I Don’t Wanna be Alone Anymore” which is quite catchy. Then I started thinking about the financial situation of this country, and voila! A parody was born! This song goes out to all the families and single people going through the rough times right now – hang in there! We’ll get through it!“I Don’t Wanna be in Debt Anymore” sung to the tune of Billy Joel’s “I Don’t Wanna be Alone Anymore”

She said she’d see me after work, in the living room
And she started to cry
What was wrong I wasn’t sure and she wouldn’t say why

So there I was sitting waiting in the room and she handed me all of our bills And when I saw them I couldn’t help laughing their a sad site baby but we’ll get through it, cause

I don’t want to be in debt anymore
I was working it out, but now I’m tired and poor
No I don’t want to be in debt anymore
And I want it to end, before I turn 84
It doesn’t matter what I’ve done in the past
I’ve just got to make this money last
Taking what I have and using it well
Cause I don’t want to be in debt anymore

It so frustrating paying bills when I barely have the proper funds to get by
It’s so amazing how we got here in the blink of an eye
But I’m confronting all the cold hard facts that I’ve got face
So I’ll just have cut all my expenses where I can
She looked at me with those eyes and said “tell me your plan…

And will you still be saying -”

I don’t want to be in debt anymore

Thanksgiving

It’s that time of year again!  Time to ponder what we are greatful for.  I remember Thanksgiving growing up at my house when I was little.  We would always eat a light breakfast, if we ate anything at all, and then we’d go over to my Grandmother’s at about 11 AM, and the smell of baking dressing and turkey would hit our noses.  The numerous pies we made (two chocolate cream, a coconut cream, and a pumpkin) would be in the fridge, and we would do the best we could to resist sneaking a taste.  This, of course, did not apply to when the turkey came out of the oven.  In our family we never carved the turkey at the table. My aunt and uncle always did the job of carving it and platterizing it before we ate, and then we would serve ourselves buffet style in my grandmother’s small kitchen and bring our plates to the table and eat.  What was I saying about the turkey?  Oh yeah, so when my aunt and uncle would carve this thing, we would always take pieces of the turkey skin and eat it before the meal.  My sister and I still do this today (although we aren’t as greedy as when we were younger lol).  I tell you what, turkey skin pre-meal is one of the finer things in life.  I think my Mom has figured this out too as every now and then I see her sneak a taste as well.  Anyway enough about the food.  Here is a list of what I am thankful for this year:

1) My friends and family
2) The fact that I was born in America
3) The fact that I have never gone hungry
4) The fact that for the most part, my loved ones and I are healthy
5) The fact that I am 25 and have a job in my field of study that allows me to support myself
6) The fact that I had a great childhood
7) The Internet, and cell phones – I’ve been alive long enough to know what it was like before either existed for personal use 8) Nintendo Wi – What a cool game system!
9) Books – Love em
10) The fact that I am not a turkey
11) Did I mention my friends and family? Yeah you guys are awesome…

OK, so I can’t make quiche

Hello ladies and gentlemen!  Tonight I felt like experimenting a bit.  I am a huge fan of quiche – and for those who might not know what that is, it’s like an egg pie.  Usually, it has cheese, and either some sort of meat (like bacon) or some sort of vegetable (like spinich or broccoli).  It is really good, but so high in fat and cholesterol.  I wanted to make a lower fat, lower cholesterol version.  It took me about three hours (or at least it seemed like it), and I substituted the following ingrediants:

For eggs, I substituted Egg Beaters, for bacon, I substituted turkey bacon, for cream, I substituted 2% milk, and for shortening in the crust, I substituted Smart Balance (a cholesterol-free, trans-fat free butter substitute).

I’ve never been good at baking, but my guess where I messed up here was trying to make quiche healthy.  There is a reason why it is so darn good.  It’s not supposed to be healthy.  It’s not supposed to be an overly salty, watery, greasy crust egg thing.  It’s supposed to be fluffy and rich.  Oh well.  NO MORE HEALTHY QUICHE! lol

If anyone out there does know how to make quiche healthy, I would be interested in knowing.  But, for now, I will just have to have it in moderation….
